Banana Bread..

Banana Bread to me isn't very familiar, I have only ever made it once having tried it and enjoyed it hundreds of times. Banana Bread is a great recipe for getting rid of older, brown and spotty bananas without them going to any waste!


The texture of Banana Bread is quite like no other, the bananas give the loaf a jellyfish consistency that is super moist and very tasty, of course you can add nuts or any other dried fruit to the mixture but I like to keep mine simple.


Recipe:

140g Butter

140 Caster Sugar

2 Large Eggs

140g Self-Raising Flour

1 Tspn Baking Powder

2 Very Ripe Bananas

50g Icing Sugar


Method:

Preheat oven to 180c/160fan

Line the bottom and sides of a 2ln loaf tin with greaseproof or butter


Cream butter and sugar in a mixing bowl until light and fluffy

Beat eggs then add them to the creamed mixture

Sift in flour and add baking powder

Then in a separate bowl, mash up bananas with a fork then add to mixture

Pour mixture into your lined tin and bake for 35-40mins until a skewer comes out clean


Cool in the tin for 10mins then pull out of tin and cool on a wire rack


For the icing:

Mix icing sugar with a 2-3tspn of water, be careful not to add too much water as icing will turn transparent.

Drizzle the icing over the cake, if you wish add freshly chopped banana or banana flakes
