Chewy Chocolate Chip Cookies

Chocolate Chip Cookies.. everyone's got to love these right?

What's not to like about a warm, fresh out the oven, melt in the middle cookie?


This recipe can be made with the children as it's super easy and they can get involved mixing and moulding. I would recommend leaving the cookie dough over night in the fridge, just because I believe it gives the cookies a richer flavour, however if you are wanting to cook them the same day, they will still taste great.


Recipe:

165g Butter

150g Soft Brown Sugar

100g Granulated Sugar

1 Egg

1 Egg Yolk

1 Tsp Vanilla Extract

285g Plain Flour

1 Tbsp Corn Flour

1/2 Tsp Salt

1 Tsp Baking Powder

1/2 Tsp Bicarbonate Soda

200g Chocolate Chips


Method:

Place a piece of greaseproof paper on a baking tray

In a mixing bowl add the butter and sugars and whisk until pale brown and fluffy

Add in your full egg, then your egg yolk and vanilla extract and whisk again until fully combined

Add in plain flour, cornflour, baking powder, bicarbonate of soda and salt and whisk until a cookie dough is formed

Add in chocolate chips or any other treats you fancy and fold until they're distributed well


Roll into balls, then place them on your greaseproof and pop them in the freezer for 30 minutes or 1 hour in the fridge


In the meantime, preheat your oven to 170c/150c fan


When the cookie dough balls have had time to chill, spread your cookie dough balls out on the tray, I bake around 4 at a time


Bake the cookies in the oven for 10-15mins. The cookies will flatten themselves whilst baking but if you prefer much flatter cookies then feel free to flatten them slightly

Once baked, leave them to cool on the tray for at least 30 minutes, as they will continue to bake whilst cooling
