Chocolate Brownie Heaven..

Each to their own with brownies, some like them dense, some like them light, some like them square shaped, some like them rectangle finger shaped! I love a chocolatey, gooey brownie that isn't too dense, but isn't too much like a piece of cake. This is why I adore this recipe and if you follow the instructions correctly and patiently, you will have yourself some mouth-watering brownies on your hands...or on your lips should I say!


It's a super simple recipe that doesn't require any spectacular skills, it's easy and is fun for everyone to get involved, give it go, you'll know what I'm on about then! ;)


Recipe:

3 eggs

275g Granulated Sugar

185g Butter, I use Aldi Pantry Cooking Marg

200g Dark Chocolate, any cheap 30p, 50p chocolate will do

85g Plain Flour

45g Cocoa

100g White Chocolate chips/chunks

Pinch of salt

1 Tsp Vanilla Extract (this isn't a must)

Method:

Preheat oven to 170c/150c fan and line a 9inch square baking tray with greaseproof paper

In a mixing bowl, add the eggs, sugar and vanilla extract then whisk until a pale milkshake consistency (this gives your brownies a shiny, glazed top)

In a heatproof bowl or jug melt the butter and dark chocolate in the microwave for about 1min 20seconds until completely melted, checking on it every 10seconds to avoid burning, you can also melt these two ingredients in a bowl of a saucepan of boiling water

Pour the melted mixture into your egg mixture and fold with a spatula in figure of eight motions until all is combined

Sieve in the flour, cocoa and salt into this mixture and fold with a spatula until you have a completely combined glossy, chocolate mixture

Now you may add any extras that you fancy, I chopped up a 100g White Chocolate bar into chunks and folded these in, you could also use chocolate chips, mini eggs or cookie pieces

Pour brownie mix into lined baking tin and bake in the oven on a middle rack for 30mins, it doesn’t matter if your brownie forms a crack as this will sink down, this just means the oven is too warm

When your brownie has finished baking, pull it out the oven and leave it in its tin.

You can now decorate the top of the brownie with anything you like, I used Mini Terry’s Chocolate Orange segments, pushing them in slightly so that they keep shape but melt underneath.

When decorated as desired, leave to cool for about 30mins in its tin, before transferring it into the fridge for a further 1-2 hours, the longer the gooier

After it has had time to cool completely, pull brownie out of tin and peel the greaseproof from the sides of the brownie and cut into 6 rectangles/8 squares
