Jaffa Cake Brownies..
If you haven't already tried out the chocolate brownie recipe then you must!

Jaffa Cakes, are they a biscuit or a cake? To me they are a biscuit, a biscuit that I decided to incorporate in my brownie recipe. Why? Because my little brother loves them and asked if we could try make a Jaffa Cake brownie, plus I love chocolate orange so why not!
Recipe:
3 eggs
275g Granulated Sugar
185g Butter, I use Aldi Pantry Cooking Marg
100g Dark Chocolate
50g Chocolate Orange
85g Plain Flour
45g Cocoa
9 Jaffa Cakes
Pinch of salt
1 Tsp Vanilla Extract

Method:
Preheat oven to 170c/150c fan and line a 9inch square baking tray with greaseproof paper
In a mixing bowl, add the eggs, sugar and vanilla extract then whisk until a pale milkshake consistency (this gives your brownies a shiny, glazed top)
In a heatproof bowl or jug melt the butter, dark chocolate and chocolate orange in the microwave for about 1min 20seconds until completely melted, checking on it every 10seconds to avoid burning, you can also melt these two ingredients in a bowl of a saucepan of boiling water
Pour the melted mixture into your egg mixture and fold with a spatula in figure of eight motions until all is combined
Sieve in the flour, cocoa and salt into this mixture and fold with a spatula until you have a completely combined glossy, chocolate mixture
Now you may add any extras that you fancy, I chopped up a 100g White Chocolate bar into chunks and folded these in, you could also use chocolate chips, mini eggs or cookie pieces
Pour 3/4 of the brownie mix into lined baking tin, then evenly place your 9 jaffa cakes in rows of three on your brownie mix, then cover the jaffa cakes completely with the remaining mix.
Bake in the oven on a middle rack for 30mins, it doesn’t matter if your brownie forms a crack as this will sink down, this just means the oven is too warm
When your brownie has finished baking, pull it out the oven and leave it in its tin.
You can now decorate the top of the brownie with more jaffa cakes! Pushing them in slightly so that they keep shape but melt a little.
When decorated as desired, leave to cool for about 30mins in its tin, before transferring it into the fridge for a further 1-2 hours, the longer the gooier
After it has had time to cool completely, pull brownie out of tin and peel the greaseproof from the sides of the brownie and cut into 6 rectangles/8 squares
