Lemon Drizzle For Days..
Lemon Cake to me is an amazing contribution to the tea party! The contrast between the sweet and sour is amazing, especially after an indulgent dinner, a sharp dessert is sometimes nicer rather than a sweet, chocolate dessert.
This Lemon Drizzle recipe can be used in a lb tin also, however 5oz of all ingredients should be used rather than 8oz. Either way it tastes lovely and it's definitely a favourite in my house.
Recipe:
8oz/225g Caster Sugar
8oz/225g Cooking Margarine
4 Eggs
8oz/225g Self-Raising Flour
1 1/2 Tspn Baking Powder
3/4 Drops of Lemon Extract
(Taste testing is the easiest way to find out😋)
Method:
Grease a 8inch bundt tin with butter/margarine
Cream cooking margarine and caster sugar together in a mixing bowl until light and fluffy
Add 4 rook temperature eggs,1 at a time, whisking between each one
Add self-raising flour and baking powder and whisk again until combined.
DO NOT OVERWHISK
Add lemon extract and whisk gently again
You don’t want to whisk too much as all the air created previously will be lost
Place in bundt cake mold and bake for 25-30mins at 170c/150c fan, or until baking skewer comes out clean
Once cake is baked, leave aside in its tin for 10-15mins
Then remove from tin and place on cooling rack to allow it to finish cooling
Removing it from the tin should be fairly easy, if you have greased your tin enough. Bundt cakes are notorious for sticking inside their tins
Once your cake has cooled, you can begin to decorate
Decoration:
6oz Icing Sugar
3/4 Tbsp of a lemon juice
Yellow Food Colouring
Place icing sugar in a bowl/jug and add a lemon juice
Whisk until combined, if you do feel it is too thick add more lemon juice or a few tspn of water and whisk again until you have reached preferred consistency
Split your icing sugar in half, placing one half in a bowl or a jug, add a few drops of the food colouring and mix
Then drizzle the two icings over the cake
Adding a zest of a lemon on top of the icing is a nice touch, however I have chosen sugar flowers
