The "Lighter Way to Enjoy" Rocky Road
Hiya Guys! Today I'm going to be sharing with you a little twist on a classic favourite!
For over 150 years, people all over the world have been indulging in this quick and easy teatime treat, thanks to the Australians!
Rocky Road has been a favourite for years, it comes in all shapes and sizes, some containing nuts, some cherries, but I prefer mine with neither, just a plain digestive and marshmallow, but for now I am swapping the digestives for Maltesers..see where this is going!
Today I am going to be sharing with you my Maltesers Rocky Road Recipe..Enjoy!
Recipe:
300g of Maltesers (x8 37g bags)
200g Milk Chocolate
100g Dark Chocolate
70g Digestives (To give it structure)
100g Large Marshmallows
100g Unsalted Butter
Decoration:
50g White Chocolate
1/2 37g Bag of crushed Maltesers
Method:
Line a 9inch x 7inch rectangle baking tin or airtight container with cling film
In a large mixing bowl, add your digestives and beat with rolling pin until crumbly, leaving some pieces bigger than others.
Using a wet pair of scissors, cut marshmallows up into small cubes and place in large mixing bowl along with digestives
Again, using a rolling pin, gently tap the bags of Maltesers until the majority of them are crushed. I like to leave a few of them whole or in halves, so that when you cut into your Rocky Road later you are able to see the Maltesers visibly.
Pour crushed Maltesers into the mixing bowl
Now snap/cut your milk and dark chocolate up into small pieces and place in a heatproof bowl along with the butter, place over a saucepan of boiling water to melt, stirring occasionally. I melt my chocolate using a Pyrex jug and a microwave, melting the chocolate for about a 1min 20seconds, checking on the chocolate and stirring to avoid burning.
I find it quicker in the microwave but either way is fine.
Once melted, leave to stand for a few minutes to avoid melting the marshmallows
Pour your melted chocolate into your mixing bowl full of ingredients and fold carefully until all if chocolate coated.
Pour mixture into lined tin and disperse evenly into corners
Melt white chocolate using the same method and drizzle over the rocky road
Once again, crush a bag of Maltesers and scatter over the rocky road, adding a few whole Maltesers is also a nice touch!
Leave to set in the fridge for 3 hours, then enjoy!
