The Rocky Road to Heaven

Rocky Road has got to be one of the quickest, most simplest recipes out there!

You'd be silly not to give it a go! Whether they're square, triangle or rectangle, they taste just as good!


Recipe:

2oog Milk Chocolate

100g Dark Chocolate

50g White Chocolate

4 tbsp Golden Syrup

100g Digestives (approx.7 biscuits)

100g Unsalted Butter

150g Large Marshmallows


Method:

Line a 9inch X 7inch rectangle baking tin/plastic air-tight container or a 8inch round sponge tin with cling film.

Using a wet pair of scissors, I recommend using the Haribo Chamallows 150g bag, chop up the marshmallows into small cubes. Leaving a few over for decoration.

Place digestives in a mixing bowl and beat with a rolling pin until the biscuits are small crumbs, leaving a few pieces larger than others.

Add the chopped marshmallows to the digestives.

Melt the milk and dark chocolate together along with the unsalted butter, in the microwave, in a glass pyrex jug or any microwave safe container, this will take about 1min but keep checking in burts of 10seconds and stirring to avoid burning the chocolate.

You can also melt the chocolate in a glass bowl over a saucepan of boiling water.

When the chocolate and butter have melted completely, it should look silky.

Leave to cool for a few minutes to avoid melting the marshmallows.

Pour the melted chocolate over the digestives and marshmallows, then add the golden syrup.

Fold all ingredients together slowly until everything is covered in chocolate.

Pour the mixture into your lined tin and evenly disperse.

For decoration, melt the white chocolate in the microwave or of course in a glass bowl over a saucepan of boiling water.

Drizzle the white chocolate over the rocky road, then randomly scatter the left over chopped up marshmallows.

Leave to set in the fridge for 2-3 hours.

I was able to cut the rocky road into 8 equal pieces.
